  • I am a proud son of some awesome parents!  Went home this weekend and found that my parents were in the local newspaper just this past week.  Pretty cool !

  • The McDonald You Never Knew About

    To many of you who know me well you know that I do not promote eating at fast food restaurants such as McDonalds.  Fast food places promote a super-size me artery clogging high in Trans fast range of foods without you knowing what’s in the food of course.  Take McDonalds for example you ever wonder why their french fries have such a distinctive smell?  Well if you pay a local visit to where a lot of McDonalds foods are manufactured you will find yourself walking into the plant smelling that distinctive french fry smell, except you wouldn’t find any potatoes.  Interestingly you’ll find that artificial flavoring and smells that they add to the fries to give them their famous aroma.  It’s no wonder when you leave McDonalds fries out for a couple week nothing happens to them.  They don’t spoil.  Pretty gross if you ask me. 

    There has also been valid information across a wide varieties of resources I have found that many of these fast food chains have high levels of Trans fat in their foods which is a product of hydrogenated vegetable oil which aids to a unhealthy diet.  The interesting part is how there is variation in Trans fat content across other countries.  Trans fat also raises bad cholesterol and lowers your good cholesterol count.  Eating around 5 grams of Trans fat per day increases the risk of heart disease 25% according to researchers.  That’s a LARGE percentage.

    LOOK FOR FOODS HIGH IN FIBER, PROTEIN, LOW IN FAT & SATURATED FATS, OBTAIN VITAMINS & MINERALS FROM VEGETABLES & FRUIT.  SUBSTITUTE FATTY MEATS FOR LEAN MEATS SUCH AS CHICKEN BREASTS OR FISH.  LIVE WELL EAT WELL!

  • The Horrible Client

    August 9th 2005.  What so significant about this particular date?  Well, for my short and brief entry August 9th, 2005 was the last time I had visited my Orthodontist for a check up on my braces that I have had for nearly 3 years now.  Yeah, August is ridiculously way in the past and its what, April 11th, 2006.  Sheeshhh that’s a long time you might say! =) 

    When I walked into my appointment today I was greeted by a handful of hellos from staff at the office saying “Wow, you finally made it Stephen” hahhaa, at this points its just funny and might I add I had missed my previous 3 appointments in the past.  Yeah, I know I am such a horrible client!  So horrible that my orthodontist even wrote a personal letter reminding me that I should come in!  At the end of my appointment I had some good news though…

    …my next appointment I get to remove my braces, yay =)  I wonder what I will look like.  It’s been three long years since I can remember what I look like without braces.  Man O man I can’t wait to see my teeth naked once again =) 

  • The Perfect Fellowship

    The perfect fellowship you say?  Where can I find that?  Well, to put it to you nicely, you can’t find it.  In this world it doesn’t exist and that’s the beauty of it.  What, you say there is no such things as a perfect fellowship?  And I am telling you YES.  You can search far and wide and you will never find it.  Why you ask?  Because we are all broken people, with broken lives & relationships.  I once heard a pastor speak of a man who left their church because there was too much drama and issues to deal with.  The pastor asked why and the man responded saying he found a church that doesn’t have all this drama. Pastor: “Blessings to you and good luck!”  This weekend God really revealed to us how much crap, drama and issues we have going on but somehow its also beautiful at the same time.  Yes, we have issues with one another, we argue, we have relational drama, we have racial and cultural drama but you know what, its only when we are all in the middle of this crap where we are stretched beyond our own belief.  It’s unbelievable how much you really grow when you stop and think about it.  If fellowship was easy, there were no problems and people were just perfect, there would be no need for Jesus right?  Right!  Jesus in the puzzle piece that holds everything together but its when you really choose to stick together in all our brokenness, crap and junk where we experience the true joy of fellowship.  I choose to be in crap!  How about you?

    This weekend I had the privilege of going on our Annual Intervarsity Spring Conference.  May I say it was a very good and restful weekend.  Aside from fellowshiping with others, playing games, having fun I was able to find a place of solitude to rest my mind from so many things I have been thinking about (way too many to list, trust me).  The evening we arrived at Diamond Arrow we had our guest Speaker Brad Wong share with us and then the rest of the evening was dedicated to what was called a Night of Silence.  We were encouraged to engage in a time of solitude, stillness without being able to talk to anyone at the camp and putting a hold on listening to music.  What the freak?  “I can’t do that!”  If you know me, I’m always around some sort of ambient source of noise and initially I wasn’t really up to this whole silence treatment thing.  The first hour or so was somewhat hard as I sat in the cabin by myself in silence.  I thought to myself, this is strange.  No noise except for the rain trickling down the roof of my cabin.  No computer, music or anything to distract me except homework which I wasn’t interested in doing on a Friday night.  So I spent the rest of the night reading some Spanish and finally engaging into some prayer and silence with the Lord.  It was very restful and peaceful and the next morning I felt well rested and light as a feather.  It was a feeling I haven’t felt in a really long time.  I thought to myself, why don’t I do this more often?  The only answer I had to that question was because I’m always too busy or have too many things to juggle in my life that I don’t seem to have the time to stop and smell the roses (as cheesy as that sounds) but its true.     Freedom in Forgiveness

    Saturday, Brad Wong (guest speaker) spoke about Forgiveness.  Interesting topic I said to myself.  To make a long story short, forgiveness is something I have been struggling with this whole year.  I have had trouble forgiving someone and most of all myself.  The part that hit me about his talk was when Brad said…”Forgiveness is wishing them well.”  I thought to myself, what does that look like.  Well, often we say we forgive someone/ourselves but how do you we know we have forgiven them/ourselves.  Is it that you say you forgive but deep down you harbor bitterness inside?  Or is it really a change of heart where you want to send them with blessings?  No forgiveness will poison you and others around you.  Forgiveness is holiness that you are at peace with people.  With an unforgiving heart, we can harbor bitterness while taking something that is beautiful and dragging it through this broken world we live in.  In our bitterness comes anger which poisons our soul and ruins the join of our Salvation.  However, the most important aspect of forgiveness is that with forgiveness comes FREEDOM! 

    Hard to believe this will be my last year with Intervarsity but it doesn’t stop here my friends.

  • Hey everyone, it’s been a while since I’ve updated.  I have a butt load of Seattle and Portland pictures to share with you all so I hope you enjoy them.  The road trip was absolutely awesome.  The first day we headed out to the Lava Bed National Park and that was awesome.  The following day we stayed at a bed in breakfast and some of us go to see Crater Lake.  Eventually we made our way to Portland and then Seattle.  I must say both cities are pretty cool but I freakin’ Love Seattle.  Such a beautiful city.  I would gladly go back there just to see the city skyline at night, absolutely breath taking.  Anyways, to sum it all up I had a wonderful time and was one of the best spring breaks I’ve ever had.  Well, it’ll probably be my last =) but yah.  Enjoy the pictures!!!!!!!!
