Tequila Lime Tacos w/ Gazpacho Salsa
Ingredients
1. Chicken marinated in lime, chili powder, sea salt, peppercorn pepper, garlic, paprika and Corona (the beer is key) along with a few other secret seasonings
2. Tortilla
3. Gazpacho salsa

1. yellow, red and green bell peppers
2. cucumber
3. medium plum tomato
4. red onion
5. jalapeno chile
6. cilantro
7. sea salt
8. black pepper
9. extra virgin olive oil

This meal is fun, easy and bursting with flavor for your pallets! Makes for a great and easy summer meal and it extremely easy to prepare. The salsa takes the longest to prepare! One of the great things I love about Latin American and Mexican foods are the colors and spices. Different colors bring the dishes to life. Did I mention that Mexicans know how to eat la comida muy picante. Your lucky I didn’t make the salsa with some firery pimientos (fire peppers).

I updated because my boyfriend bought me my dream camera, the Canon Rebel XT. I was using those tiny pocket cameras (Panasonic Lumix and Canon Powershot A520) for a year now and stopped posting because I knew I wasn’t improving. what you see from my current posts are really “snapshots” that I’ve taken in the past few days that turned out really good simply because the camera is good. that’s the trick i learned :giggle: you can be a horrible photographer, but having an expensive Digital SLR camera makes everything look professional. mine was about $1200 because I bought a Tamron 18-200mm lens which was an additional $400 since it shoots at wide-angle and macro. This is to save me the trouble of changing lenses and adding dust to the camera body in the future, as well as being the more inexpensive route since a wide-angle and macro lens on its own could be up to $300 each. I don’t know if any of that makes sense to you since you seem to be interested in a fun point-and-shoot, but the Canon Powershot you’re thinking of getting is great too. If you have the money, you should go for it because it shoots at 6mp (better prints and sharper quality) and has the swivel. I was considering buying the older (and silver) version of that camera before just because of the swivel since I always took self-portraits. anyway, thanks for being such a loyal fan of my xanga and hope you get the camera soon
